Wild Garlic

Wild Garlic

In some of the hazel woods of the Burren ramsons, known locally as wild garlic, carpet the whole woodland floor in late April and May. Their bulbous roots are very similar to small garlic cloves and smell strongly of garlic, as do the crushed leaves. We gather leaves and roots to make soup which we sometimes serve in the Tea Rooms, to a, l et's say, mixed reception.
